What is a mother? Someone who shares her life and her love with the child that she bears.
What is a grandmother? Someone whose child bears a child and changes a grandmother’s life forever.
There is no greater love than the love there is between a grandmother and her grandchild, no matter how many she has. To her, they are the cutest, smartest, most adorable children on earth and they can do no wrong.
This blessed grandmother can now spend time and a few dollars on them, make and bake special foods, lavish praise and support, play with or just be there to listen.
And then they go home.
And then grandma rests, gets recharged and prepares for their next precious visit.
I have a recipe for strawberry-mallow cake roll that is perfect to serve on Mother’s Day. It is a sponge cake filled with a cream cheese marshmallow crème filling and fresh sliced strawberries. A perfect thank you dessert for all mothers.
Happy Mother’s Day, everyone and, as my youngest granddaughter says, “Let the day shine!”
Strawberry-Mallow Cake Roll
4 eggs, separated
2/3 c. flour
1 tsp. baking powder
1/4 tsp. salt
3/4 c. sugar, divided
1/2 tsp. vanilla extract
2 cartons (8 oz. each) spreadable strawberry cream cheese
1 jar (7 oz.) marshmallow crème
3 c. sliced fresh strawberries
Let eggs stand at room temperature for 30 minutes. Line a greased 15 in. x 10 in. x 1 in. pan with waxed paper and grease the paper. Set aside. Sift together the flour, baking powder and salt; set aside.
In a large bowl, beat egg yolks until thick and lemon-colored. Beat in vanilla. Add dry ingredients; mix well.
In a small bowl, beat egg whites until soft peaks form. Gradually beat in remaining sugar until stiff glossy peaks form and sugar is dissolved. Fold a fourth of the egg whites into batter; fold in remaining egg whites.
