COLUMN: From Grandma’s Kitchen - A perfect time to make pizza

February is the perfect month to celebrate Valentine’s Day. It’s in the middle of winter, we’ve had enough of slush and boots, and life gets a little boring staying inside when it’s bad out. We need something that will perk us all up.

What better way than to show our love and caring for one another? Whether we’re newlyweds or foreverweds, it’s fun to show how much we really care. We can send a card, make reservations to go out to dinner or buy flowers, candy or jewelry. It’s also a sweet time to get engaged.

A fun way to celebrate Valentine’s Day is to spend time with grandchildren and teach them how to make pizza. They love spreading the dough on the pan then spreading the sauce and cheese on top. Just remember not to get the water too hot or it will kill the yeast and it won’t rise.

Pizza dough

3 c. warm water

1 tbsp. Dry yeast

1 tbsp. Salt

1 tbsp. Sugar

1/3 c. olive oil

7 c. flour

In a large bowl, add yeast. Add warm water and stir until yeast is dissolved. Add salt and sugar. Add oil. Add four cups flour and stir. Add remaining flour and mix it in. Place dough on a counter dusted with flour and knead until smooth. Place in greased bowl, flip dough over. Cover with a clean cloth and let rest about an hour. Punch down, divide in half and place floured dough on a shortening greased pan. Stretch dough in pan. With fingers, rub a little olive oil on dough. Spread sauce (see recipe below) on top then sprinkle with grated Pecorino Romano cheese. Let rise slightly then bake at 450 degrees for about 20 minutes. Watch carefully so it doesn’t burn.
